Clean Eating, Flourless Pancakes

IMG_0144So my favourite holiday of the year is probably Pancake Tuesday aka Fat Tuesday in America. The day before Lent begins and you have to give up all the naughty things for 40 days!

So why not treat yourself to these healthy, clean eating, flourless pancakes? They’re also perfect for breakfast or brunch too! These pancakes are like American style pancakes or dropscones/scotch pancakes in the UK. Either way they’re Β d e l i c i o u s Β and only 385 calories per serving (4 pancakes!)

 

Clean Eating Flourless Pancakes

  • Servings: 2

oil spray

100g (a heaped cup) of quick oats

4 eggs

1 large ripe banana

1 tsp cinnamon

  1. Put the oats, eggs, banana and cinnamon in a food processor and blend until smooth. This may take a while for the oats to grind down completely.
  2. Heat a pan over a medium heat and cover with oil spray.
  3. Dollop approximately 1/8th of the mixture in the pan. It should spread a little bit (but not too much!). Cook for a few minutes on each side – don’t have the heat too high otherwise the outside will brown fast leaving the inside not cooked properly.
  4. Repeat with the remainder of the mixture and serve with berries, jam or syrup – whatever takes your fancy.
