This is a simple, healthy and yummy scramble to kick your day off right and keep you full til lunch.
Healthy Egg and Garlic Veggie Scramble
2 cups chopped white mushrooms
1 cup broccoli
1 cup cherry or grape tomatoes
2 cups kale
1 tbsp minced garlic
2 tbsp milk or unsweetened almond milk
salt and pepper
- Oil spray a saute pan and add the mushrooms. Wait til they’re browning before adding the broccoli, tomatoes and kale. After a couple of minutes add the garlic.
- While the veggies are cooking, we’re going to make the eggs. Crack the eggs in a bowl, add the milk and season with salt and pepper. Whisk up all that loveliness, heat up a small oil spray coated pan and add the egg mix. Try to limit how much you move the eggs – this will keep them fluffy and soft.
